This is my FAVORITE winter meal prep trick and I do it every week with whatever veggies I have in the house. It's even gotten me to like Brussels sprouts because they don't taste so gross this way! πππ Not to mention it keeps the house extra warm and I'm always cold ;)

Just do this and then park a portion of your roasted veggies alongside each portion of proteins you have and BOOM you hit your target food groups ;)
