This Healthy ONE SKILLET Taco Bowl Recipe is the BOMB! It makes enough for 8 servings (PERFECT for meal prep) and covers a full serving of protein and vegetables (and you can’t even tell!) And if you REALLLLLY want a taco, go ahead and get out a small whole wheat tortilla (BOOM!)
Healthy One-Skillet Taco Bowls:
2 lbs lean ground turkey
3 bell peppers (assorted colors - your choice), chopped
2 small-medium zucchini, chopped
1 red onion, finely chopped
4 cloves garlic, crushed
4 tsp chili powder
1 tsp cumin
2 tsp onion powder
2 tsp oregano (or italian seasoning since I ran out of oregano 😉 )
2 15oz cans of fire roasted diced tomatoes
Salt and pepper to taste.
2 cups shredded cheddar or monterey jack or pepper jack cheese.
Spray 12” skillet with olive oil or coconut oil. Brown ground turkey, breaking it up in the pan, over medium-high heat. Turn heat to medium-low. Add garlic, red onion, other veggies and spices, and cook until veggies are tender, about 5-10 minutes, stirring frequently. Add tomatoes and continue to cook until heated through.
Portion out into 8 servings, top each with 1/4 c of shredded cheese. Enjoy!
Following the fix? Each serving is 1 red, 1 green, 1 blue.
Other options for serving:
stuff filling into a whole wheat tortilla (add a yellow container);
wrap filling into boston lettuce or romaine lettuce leaf;
add cilantro and/or a tbsp of low fat plain greek yogurt
add no sugar hot sauce if that’s your thing 😉 (it’s mine!)
