So I've noticed I've been gravitating towards two themes lately - making healthier versions of carb-heavy-style breakfasts and functioning in a very particularly male-targeted/dominated area of the health and fitness world. By the latter I mean I've decided to take on Body Beast (a Beachbody weights-based program originally targeted only to men) and Mancakes, a high-protein, nutritional version of pancake mix made by these guys: http://www.eatmancakes.com/
Since mancakes is marketed to men and as a healthy carb-heavy breakfast, this fits squarely in my theme! So of course I had to get in there and throw my own spin on it...and so therefore this recipe has been renamed LADYcakes ;)
I used the regular buttermilk flavor for today's ladycakes, though they also have chocolate and cinnamon oat flavors. Their directions are simple -- add 1/2 c mix to 1/2 c liquid and cook like a regular pancake. Since that sounded boring as all get out to me, I used unsweetened vanilla coconut milk, a dash or two of almond extract, and thawed mixed berries in mine (I LOVE Trader Joe's Very Cherry Berry Blend, shown here, but you could also use bananas or other frozen fruit as you like). Then when they were done, I topped them with organic lowfat plain yogurt and sliced strawberries (mo' berries mo' better), and a drizzle of agave nectar (notice the double cross-hatch drizzle that I learned when I was a Starbucks barista many moons ago...that caramel macchiato technique NEVER leaves you!) Here you have it:
1c. buttermilk Mancakes powder
1c. unsweeteed vanilla almond milk
1c. frozen berries, thawed
couple of dashes almond extract
1 c. plain organic lowfat yogurt
1 c. sliced strawberries
agave nectar, as desired
Mix together Mancakes mix and almond milk. Stir in mixed berries and almond extract.
Ladle batter into preheated (medium heat) pan or griddle - should make 6 ladycakes in total. When the batter starts to bubble, flip. Let cook another few minutes and arrange on two plates. Top each pile of cakes with 1/2 cup yogurt and 1/2 cup sliced strawberries, and hit 'em with some agave nectar. ENJOY!!
Here's the nutritional breakdown. It IS high in calories for a typical meal, but it's pancakes. And for a lazy Sunday brunch, not too bad. Also, if you're lifting lots of weights, you need these calories. (Back to my Body Beast...)
